Ok, so it’s not summer just yet. And actually, instead of the bright, warm weather I’m waiting for, there’s an unusual amount of thunderstorms freaking me out at this very moment. Thunderstorms are so rare around here that whenever one happens, you better prepare for a power outage and make sure to have something warm—or in this case, cold—and sweet to comfort you.

The popsicles

These popsicles are like creamy sorbet, and the really great thing about them is that they’re as healthy as they are delicious, and healthy must mean you can eat as many of them as you like. Right?

The equipment

I like to use these easy silicone popsicle moulds. If you don’t have popsicle sticks at home already, here’s a quick link to order them on amazon. Lastly, you’ll need a blender. The one I use happens to also be my food processor and blender combo to save room on my countertops.

The ingredients

Whenever possible, I like to use sweet strawberries and ripe bananas, that way I barely use any sweetener like sugar or honey. Sometimes I even skip the sugar completely.

Substitutions

If you’re feeling decadent, you can substitute the yogurt for cream cheese or the milk for heavy cream. You can also go the other way by using low fat yogurt and milk.

Vegan: Use vegan yogurt and non-dairy milk to easily make these treats vegan too!

Strawberry Banana Popsicles

These creamy and naturally sweet strawberry banana popsicles make the perfect healthy treat for a summer day.

YIELD 5 -8 pops, depending on mould size

Author Stephanie @ Pretty.Simple.Sweet.

Ingredients

  • ½cup(120 ml) yogurt
  • ¼cup(60 ml) milk
  • 1-2tablespoonsgranulated sugar or honey
  • 1cupstrawberries(about 10 medium), hulled and chopped
  • 1ripe banana, chopped

Instructions

  1. Place yogurt, milk, and sugar/honey in a blender and process until combined (I like to start with 1 tablespoon of sugar and add more as needed). Add strawberries and banana and process until smooth.

  2. Divide mixture between moulds (using a pitcher makes this easier) and snap on the lid and place the popsicle stick. Place moulds in the freezer for at least 5 hours.

  3. For easy removal, place the mould inside a container filled with warm water, wait a few seconds, then pull out gently by gripping the handle.

Strawberry allergy in my house. I’ll try cherries but not sure I like the cherry/banana combo. I’ll just leave it out but would you recommend adding more cherries in that case?

Hi Christine! I’m bummed about your household strawberry allergy. There are many fruit combinations that would work well! If doing cherries and bananas, I’d recommend adding a little mango to the mix. I think the tropical notes from mangoes will really tie it all together.
